Shiitake & Quinoa Burger with Guacamole


Ingredients (makes 4)

Burger

Peanut Oil

1 Sweet Potato

3-4 Shiitake Mushrooms, Stems Removed

1 Shallot, Minced

Red Pepper Flakes

1 Cup Tricolor Quinoa

1 Cup Breadcrumbs

Juice from 1 Lemon

Salt & Pepper

Buns

Guacamole

2 Ripe Avocados

1 Tomato

1/2 a Shallot

1/2 Jalapeno or Serrano Chili

Juice from 1/2 a Lime


  1. Pierce Sweet Potato with a knife & microwave for 6-7 minutes until cooked. Cut in half & let cool. Scoop out flesh & discard skin. Set aside.

  2. Add to Quinoa 2 cups water & bring to a boil with lid on. Reduce heat & allow to cook until water is absorbed 10-15 minutes & quinoa is soft. Add S&P & Let cool.

  3. Add Mushrooms to a food processor & finely chop.

  4. Mix Quinoa & Mushrooms together until well combined.

  5. Add Breadcrumbs, Lemon Juice & Shallot to Quinoa Mixture & Mix Well.

  6. Add Sweet Potato 1/3 at a time until mixture binds together & doesn't fall apart.

  7. Divide into 4 Patties & fry on stovetop until evenly browned (4-5 minutes a side).

  8. Add all ingredients for Guacamole to a bowl & Mix until Smooth.
