Crumpets

Ingredients
450g AP Flour
3 cups Milk
10g Quick Acting Yeast
10g Salt
Method
Heat Milk on stove until warm, do not let boil. Remove from stove.
Sift Flour into a large bowl.
Add Yeast & Salt to flour & mix to combine.
Add Milk & whisk to a smooth batter.
Cover bowl & let rise for 2 hours.
Heat a frying pan & melt butter in pan.
Pour batter into pan (about 1/2 inch thick) for a giant one as pictured, or individual round non-stick molds, fill about half way.
Gently heat until holes form on the top & it is a golden brown underneath (10-15 mins). Flip over & cook a further 5-10 minutes to brown the top. (20-25 mins total).
Let cool on a cooling rack & rewarm to serve. Individual ones can be toasted.
Serve with butter & jam.
