Chilaquiles with Tomatillo Salsa & Baked Eggs

Homemade Tortillas

Tomatillo Salsa

1 Small Onion

1 lb Tomatillos

1 chili - Jalepeno

Small bunch of cilantro

Lime juice

Put all ingredients in a blender & pulse until just combined.


8-10oz Grated Monterrey Jack Cheese.

5-6 Eggs.

1. Spoon enough of the salsa to cover the bottom of a 9x9 casserole dish, add 1 layer of tortilla chips & 2-3oz of the Monterrey Jack Cheese.

2. Repeat 3 times, finishing with Tomatillo Salsa & Cheese on top.

3. Crack eggs on top & Bake in a 350 degree oven until whites are set & yolks are still runny.

4. Let cool 5 minutes, top with extra Cheese & Cilantro & serve.
