Cauliflower & Spinach Risotto with Nutmeg & Fontina Cheese

Inspired by A Bird in the Hand, by Diana Henry, I simply left out the chicken.
Recipe
Melt Olive Oil & Butter
Add finely diced Onion
Add Rice cook 2 mins
Add White Wine, cook until almost gone,
Add Veg Stock slowly as per normal risotto. Cook until almost tender.
Breakup cauliflower, microwave (I did 1/2 head for 6 mins). Add to risotto.
Take stems off Baby Spinach, with 2 mins left, add to risotto, add Nutmeg. Stir.
Take off heat, add grated Fontina & Parmesan.
Serve
